4. Sidelines Sports Grill and Bar in Mount Dora, Florida

5. will become just another statistic.

6. In 2006, Rich Marinacci, a successful franchise owner,

7. was forced to take over the buffet restaurant

8. he had been leasing

9. after his current tenants lapsed on their rent payments.

10. I had an empty building and I didn't wanna do a buffet,

11. 'cause that's not me.

12. I wanted a sports bar, and that's what I built.

13. Taking the profits from his successful franchises,

14. Rich poured money into his new personal endeavor.

15. I initially invested $75,000.

16. And in May of 2009, and I opened Sidelines.

17. This is Rich, manager of Sidelines, how can I help you?

18. It hit its peak moment in 2014,

19. and I showed a profit of over $50,000. And it was doing well,

20. so that's when I let go of my other franchises.

21. Unfortunately for Rich,

22. running a bar was a far cry from running a franchise

23. where infrastructure issues and overhead

24. were often handled by someone else.

25. I didn't know what I was doin'. Equipment would break.

29. It wasn't a franchise, so I'm on my own, now.

516. Last night, I didn't really get to see much during the recon.

517. But I did see

518. that they were inconsistent in the drinks that they made.

519. From the looks of last night, you guys need a lot of help.

521. It's hot and humid out here in Mt. Dora,

522. so today for training,

523. we need to create some cocktails that are extra refreshing.

524. We're gonna make sure that they're consistent

525. with what they produce.

526. So today, we're gonna be usin' a great spirit

527. called Bacardi Superior Rum.

528. It was created by somebody named Don Facundo in 1862.

529. It took him 10 years to develop this recipe to create

530. a nice, smooth, balanced rum.

531. It's delicious because it has nice vanilla notes,

532. some almond notes,

533. and that comes from the white oak barrels that it's aged in,

534. as well as the mix of charcoal that it gets filtered through

535. to create the smoothness of it.

536. The reason this is so great to use is

537. because it's not harsh like gin,

538. but it doesn't get washed away like vodka.

539. So we're gonna use this for a drink called a mojito.

540. Are you guys familiar with the mojito?

541. - Oh, yeah. - Yeah.

542. Ashlee, I want you to come back here and do it for me.

543. - Oh, no.

544. First of all, I wasn't ever really trained here.

545. So, I have slacked in the past year

546. because of the standard that I there isn't one, really.

547. We don't have soda on the gun so I'd have to go in the back.

550. This is why it's hard to make drinks really fast.

551. And there's your mojito. So go ahead and have a seat.

555. Let's create a mojito the way it's supposed to be made, OK?

556. Two lime squeezes, go ahead and squeeze em in.

557. We wanna make sure that we use about eight mint leaves, OK?

558. Three quarters of an ounce of simple syrup,

559. and we're gonna muddle right here. Add our ice,

560. and now we're gonna add one and a half ounce

561. of Bacardi Superior Rum.

562. And we're gonna top it off with soda water.

563. Now, what I like to do is give it a nice stir,

564. to kind of infuse those flavors together inside your cocktail.

565. And, we're gonna garnish it with a beautiful mint sprig on top.

566. But in order to get those flavors comin' out,

567. you're gonna want to give the mint a nice slap.

568. And place it on top with a sugar cane.

569. And this is your classic mojito.

570. It's gonna be refreshing, not overpowering sweet.

571. You get mint, you get lime.

572. - That is good. - Oh, wow.

573. Tonight's the stress test, guys. Lookin' for consistency,

574. 'cause I will not let it go across that bar

575. if it's not made correctly.
